How to Make Cashew Milk

Fresh cashew milk!


Cashew Milk Recipe
Makes  3.5 cups. 

Ingredients:
  • 1 cup raw, unsalted cashews
  • 3 cups water
  • 3 cups distilled/filtered water
  • 1/2 vanilla bean or 2 tsp vanilla extract (optional) 
  • 2 tsp cinnamon (optional)
  • 4 Tbs agave (optional)
Instructions:
  1. Soak cashews in 3 cups tap water overnight. 
  2. Dump out the water.
  3. Toss cashews in blender. Add 3 cups distilled or filtered water. Optional: add cinnamon, vanilla, and sweetener.
  4. Blend well. 
  5. Run mixture to a fine-mesh strainer to filter out some of the cashew pulp. 
For this recipe I used agave to sweeten the milk, but honey or maple syrup would work also. If you store the milk in a tightly-closed jar or bowl, it should keep for a week.

I'm not a fan of drinking cashew milk by itself, just because of the pulpiness, but it's great for smoothies. Make a batch at the beginning of the week for delicious, nutty smoothies!
